Provide smooth, washable walls and ceiling in the kitchen, bathroom and storage room. 2. Provide smooth, easily cleanable, non-absorbant, commercial quality floor surface in the kitchen, bathroom, and storage room. Floor in the kitchen and bathroom shall extend up the wall at least six (6) inches and have a minimum 3/8 inch radius cove at the floor/wall juncture. The floor in the sales area shall be easily cleanable. 3. The entire building shall be constructed so as to prevent the entrance of rodents and insects. Screen all openable windows. 4. Exterior and restroom doors shall be self closing and tight fitting. S. Provide breakage protection over lights in the kitchen. 6. Provide adequate ventilation in the bathroom (screened windows or mechanical). 7. Provide details on Type II flood (C.F.M., size, source and quanity of make-up air) . 8. Provide permanently installed toilet paper,' soap, single use towel dispensers in the bathroom. 9. Provide hot and cold running water from a mixing faucet at the handwashing and kitchen sink. 10. Provide hot water heater with sufficient capacity to provide for peak hot water needs. 11. Provide indirect sewage connection for kitchen sink (if food will be prepared directly in the sink) and for any refrigerators that are not equipped with an evaporator. 12. Provide an approved water source. Existing agricultural well cannot be used without substantial repairs and modifications. 13. All shelving shall be smooth, easily cleanable, durable (no particle board), non-absorbant and at least five (5) inches off the floor. All cabinets and shelf units shall be of easily cleanable, tight fitting construction. 14. Work countertops and preparation tables shall be of plastic laminate (like formica), stainless steel, hardwood, or equivalent. T. J. Farms Page #2 July 10, 1984 15. Provide a separate enclosure for storage of chemicals and employee personal belongings. 16. Provide easily cleanable surface for storage of outside garbage containers. 17. Meet all other applicable requirements of the California Retail Food Production and Marketing Law and of the California State Health Department. I suggest that you contact the State Health Department at 916-445-6921 for their requirements. 18. Submit application and fee to this department for your Health Permit and obtain such permit prior to opening. 19. Call for inspection by the Health Department prior to opening.
