1. Maintain all potentially hazardous food (PHF) at or below 41T or at or
above 140T. Check all refrigerators hot holdin units, and deliveries to verify
that potentially hazardous foods are�eing maintained and delivered at proper
temperature. Pre -chill potential) hazardous food prior to placin such foods
in salad bars or other equipmentdesignedonly for keeping colVood cold.
Prepare PHFs in small batches where possible. Shell eggs and salad bars (for
up to 12 hours) may be kept at 45°F. (sec. 113995,113597, 114003)
2. Cook foods sufficient) rior to serving, to destroy, hamnful bacteria/viruses.
Reheat foods rapidly to 1Y650F. on range, oven, or similar heating equipment
prior to placing food in &yyuipment designed for hot holding where food must
be maintained at 140 F or more. Check final internal temperature of
cooked/reheated food with metal probe type thermometer. Customers may
request certain foods to be cooked less. (sec. 113980, 113996, 113998)
3. Cool all potentially hazardous foods rapidly in small quantities or in shallow
depths in thin walled, loosely spaced,,uncovered containers m a refrigerator
with the capacity to cool such quantities of hot foods. Cover foods after
cooling. Other acceptable rapid chill methods may also be used. Pre -chill
ingredients for foods which are stored/displa ed cold and cook foods in
smaller batches whenever possible. (sec. 113980, 114042)
4. Provide acceptable HACCP plan for the indicated foods. Implement
acceptable procedures to verify that the indicated food/equipment or HACCP
plan is being adequately monitored. (sec. 113980, 114055, 114056)
5. All food shall be manufactured, produced, prepared, compounded packed,
stored, transported, kept for sale, and served so as to be pure, free from
contamination, adulteration, and spoilage; and shall be from an approved
source. All shellfish shall be delivered w5h complete tags/labels and such tags
shall be kept at least 90 days. Do not reuse unpacks ed food that has been
previously served. No food that has been prepared or sored in a private home
shall be used, served or sold. (sec. 113980, 114003, 114015)
6. Frozen food shall be kept at a temperature that will keep the food in a frozen
state. Thaw all potentiallyhazardous foods in refrigerator; under cold running
water; or microwave oven (if food will be subsequently cooked). Frozen food
that has thawed must be cooked or otherwise processed before it may be
refrozen. (sec. 113995, 114085) ,
7. Store all foods in refrigerators in a sanitary manner. Keep cooked and
ready -to -eat foods covered-. Store raw meats below cooked and ready -to -eat
foods. (sec. -114010)
8. Store foods in original, sealed container- or in non-absorbent, non-toxic
easily cleanable, food grade container, with tight fitting lid. Store all food
(except m lar a water proof containers, or cans and bottles m original shipping
contamers) a least 6 in. off the floor on easily cleanable shelves. Label
containers of bulk foods and ingredients as to contents. Label containers for
transporting food (such as ice) as to specific use. (sec. 114010, 114080)
9. Provide a food shield that intercepts a direct line between customer's mouth
and food displayed at salad bar/bufe-t. Self -serve, unpackaged processed foods
(other than buffet facilities) shall be displayed/dispensed in washable container
with tight fitting lids, handled utensil, and ingredient label. (sec. 114080)
10. Provide complete labels on -all packs ed foods indicating product name,
ingredients (in descending order by weighj, manufacturers name and address,

and harborage of vermin. Exterior doors shall be tight fitting and self-closing.

22. Store chemicals or other injurious materials (tacks, razor blades, etc.) in
separate, lower area or enclosure away from prep areas, food, utensils, or food
containers. Store chemicals in distinctive, labeled containers. All chemicals
shall be used in accordance with the directions on the product label and so as

23. Damaged food or returned food items, and foods where the label has been
removed shall be stored in separate, designated area. (sec. 11480)
24. Cleaning rags shall be used only once and then laundered- or stored in a
labeled container of clean, approved sanitizing solution between uses.

repair. All liquid waste shall be discharged into an approved, fully operative

adjacent to each food preparation area. Warm water shall be readily available

absorbent, durable, and at least 6 inches off floor. Provide rust resistant metal racks in all
refrigerators.
2. All food related equipment shall be certified as being in compliance with an ANSI
approved food sanitation standard (such as NSF standards) and shall be suitable for the intended
use. For utensil washing provide a three compartment stainless steel sink, with dual integral
stainless steel drainboards. Sink compartments shall be large enough for largest utensil.
3. Provide adequate amount of hot and cold running water from a mixing faucet at all sinks.
Hot water shall be available to all- sinks within 30 seconds. Provide approved indirect sewage
connection for 3 compartment sink and walk-in condensate drains. Pipes and conduits shall be
enclosed wherever possible. Where such pipes and conduits are exposed, they shall be at least
six (6) inches off the floor: It is understood that this facility will be connected to public water and
sewage system.
4. Provide soap and sanitary towel dispensers (or hot air blowers) at all handwashing sinks.
5. ' Either provide an approved type II hood over the smoker or the smoker shall have it's
own self-contained ventilation system (including an exhaust fan and duct).
6. Provide separate storage facilities (that are away from food or food containers) for
cleaning supplies.

7. Provide smooth, .easily cleanable, durable, non-absorbent, walls, ceiling, and self -coved
floors in walk-in cooler/freezer, restroom, janitorial sink area, prep area, wrapping area, open
food/utensil storage area, and dispensing area. Top set coving, textured gypsum board, grooved
wall panels, textured wallpaper, fissured ceiling tiles, exposed ceilings, or other hard to maintain
materials are not acceptable in such areas.
8. Provide tight fitting, self-closing exterior and restroom doors. The building shall be
rodent and insect proof. Screen all openable windows.
9. Lighting shall be easily cleanable and have shatter proof shields in areas where food is
prepared, open food is stored,' and where utensils are washed.
10. Provide concrete slab or equivalent for outside garbage storage.
11. Meet all other applicable requirements of C.U.R.F.F.L. At least one person working at
the food facility shall have passed an approved food safety test. Submit application and fee for
health "Permit To Operate" and obtain such permit prior to opening. Contact Butte County
Building Department for their requirements. Call for an inspection by this Department when
most of the work is completed and then for final.

This is a courtesy notice to notify you that you are in violation of the Butte County
Code, as follows, at the above -referenced location.
Pursuant to Chapter 24, Section 24-65, "All uses of land within a zoned district not
specially authorized or permitted by the regulations are prohibited unless they
have been found to be substantially similar to other permitted, conditional, or
accessory uses by the Director of Development Services or designee, the Planning
Commission, or the Board of Supervisors". The C-1 (Light Commerial) zone,
(Section 24-140), does not "specifically authorize" large accumulations of junk.
The storing of more than 100 square feet of "junk" on a parcel is one of the items
used to determine that a "junkyard" condition exists. A "junkyard" is not an
allowed use in an C-1 zone. "Automobiles and other vehicles, dismantled, in
whole or in part" are considered to be "junk". Chapter 11, Section 11-4 forbids
people, whether at a licensed junkyard location or not, from storing junk in public
view.
Butte County Code Section 24-305.240 Junk: Any worn-out and discarded
material in general that may be turned to some use including, but not limited to,
any old iron, wire, copper, tin, lead, rags, paper, bags, lumber, empty bottles,
bones, parts of bicycles, tricycles, baby carriages, automobiles, and other vehicles,
dismantled, in whole or in part, kept, stored, located, situated or piled in public
view, and all other similar personal property ordinarily -defined and- classified as
"junk" kept, stored, located, situated or piled in public view and not screened from
public view by a fence. _ -

Butte County Code Section 24-305.250 Junkyard: "Junkyard" means the use of
more than one hundred (100) square feet of the area of any lot, or the use of any
portion of that half of a lot which adjoins any street or highway, for the purchase,
sale of junk as herein defined.
In order to comply with the Butte County Code, you are hereby requested to remove all
garbage, rubbish and refuse from your property and maintain a regular removal schedule
in accordance with Butte County Code, Section 31-8.
It is the County's goal to obtain voluntary compliance with the Butte County Code.
However, you should be advised that Butte County has an active Code Enforcement
Program which provides an effective means of enforcement if voluntary compliance is
not obtained. Enforcement may be pursued through the issuance of citations, fines and
the recording of a Notice of Violation including a description of the action necessary to
abate the violation.
