Special Focus on the Restaurant_Indus~ Restaurants are one of the toughest and most complex businesses to run and, unless you have been in the industry and truly understand it, you cannot amass a constructive analysis of your restaurant without outside unbiased help. Independent restaurant owners fail at an amazingly high rate, typically because they begin with a number of incorrect things, including a misconcep- tion of their vision for a restaurant. There is no doubt that in the face of current market conditions, growth and leadership in the restaurant industry will nok be sustained by maintaining the status quo. Management change should be a high priority in any reska~ant owner's vision. The question lies in how that owner responds to the challenges of rising commodity prices, dwindling consumer demand, and a lending industry that is cautious as to where and whom they make loans. There are those in the restaurant industry wha do not embrace nor initiate changes in a timely fashion. Restaurant owners must be flexible, open to constant changes, and must get their restaurants nigh#, lean and productive, regardless of the economic climate. The most successful restaurant owners will be those who manage and initiate change to take advantage of available opportunities. According to research, here are three types of restaurants: 1) restaurants with negative cash flow whose days are numbered; 2) restaurants floating within their break-even point, surviving but not thriving; & 3) restaurants that are actually making money, either because they are good restaurateurs, or are just lucky. Regardless of which category you fall under, there are great benefits to you to access training to embrace and prepare for change. What you must do is develop new skills to be better able to cope with and work through those things that present challenges. When others, especially your internal staff, see you developing new skills, it will encourage them to do the same. As you push to better yourself, it is extremely critical that you have a plan in place and understand the potential impact of your plan. If you are running your restaurant hoping for luck, your dream of growing a successful restaurant may turn into a reality of failure. Restaurant owners are known for being proud and private, and are normally hard-pressed to open up their books and business. But this pride can be a costly mistake that may result in the loss of opportunities to increase profitability because you were too buried in your restaurants' day to day operation, and thereby missing the obvious. Restaurant owners are notorious for not taking the time to develop their skiffs and knowledge of the industry and the changes thereof. They rather continue to spend hours working in their restaurants doing the same thing and hoping for different results instead of taking the time to learn, work less and plan for success. Fiscal prudence and business knowledge are necessary far every aspect of business, just as improving the skills and knowledge of yourself and your team. Growing your restaurant and doing it consistently are cru- cial to developing goad management skills which comes with accessing training and consulting.
