OLD FASHIONED GERMAN POTATO SALAD
I HAVE A BETTER RECIPE FROM MY GRANDMOTHER
NAMED ORTHMANN FROM THE OLD COUNTRY. SHE
IMMIGRATED IN 1896 WITH MY GRANDFATHER AND MY
AUNT MINNIE ORTHMANN.
THE RECIPE IS:
OLD FASHIONED GERMAN POTATO SALAD BY LILLIAN
ORTHMANN-MCGOVERN
6 POUNDS OF LITTLE RED POTATOES
1 LB FARMER JOHN BACON
1 MED-LG ONION
1 CUP SUGAR
1 CUP FLOUR
1 CUP WHITE VINEGAR
4 CUPS WATER
SALT AND PEPPER
BOIL POTATOES WITH SKIN ON IN A LARGE KETTLE.
MEANWHILE, SLICE AND FRY BACON IN LARGE FRYING
PAN UNTIL ALMOST DONE. NOT CRISPY. CUT BACON
INTO SMALL PIECES. REMOVE FROM GREASE.
TURN HEAT DOWN ON BACON GREASE AND ADD ALL AT
ONCE: SUGAR, FLOUR AND VINEGAR. STIR QUICKLY
WITH WOODEN SPOON AND GRADUALLY ADD ALL 4 CUPS
OF WATER. KEEP STIRRING UNTIL SAUCE THICKENS.
DICE ONION. PEEL AND SLICE POTATOES INTO SMALL
PIECES.
IN LARGE SERVING BOWL MAKE LAYERS OF POTATOES,
BACON, ONION, SALT AND PEPPER, REPEAT.
POUR SAUCE OVER EACH LAYER, AND STIR GENTLY.
BEST SERVED WARM ------ DELICIOUS!!!
SHORY CUT: AFTER SAUCE IS DONE, TURN OFF HEAT
AND ADD BACON AND ONIONS. THEN PREPARE THE
POTATOES AND POUR THE SAUCE OVER POTATOES.
DON'T FORGET THE SALT AND PEPPER.
